As a child, Rachel created unique, imaginary restaurants in the basement of her home, fostering a lifelong love of food and hospitality that she carried with her into her adulthood. During the early stages of her career, she worked as a server and hostess at Benningan’s, California Pizza Kitchen and Johnny Rockets. When she graduated college she was offered a position as the front desk manager for Marriott International. Her love for restaurants led her back to that industry as the office manager of Lettuce Entertain You’s Wildfire Division. During her time with Wildfire, Rachel opened two restaurants. One in Eden Prairie Minnesota, where she met her husband, and then moved back to her hometown and opened another Wildfire in Glenview, Illinois. During her time with Wildfire she was able to flex her creative muscle, developing a well-loved s’mores ice cream pie. Over the years, Rachel also honed professional skills in finance, operations analysis, training and onboarding, event planning, procurement coordination, and more with ITEX, the Lake County Government, and The Medicus Firm, where she began after relocating to Texas for her husband’s job.
In need of quick financial assistance after the loss of her husband’s job, Rachel decided to begin baking banana bread and selling it on her homeowners’ association page. This eventually led her to establish her company, She’s Gone Bananas. Although her business began with banana bread, she was quickly asked by a neighbor to bake a birthday cake. Although she was unsure of her abilities at first, she turned to YouTube for guidance and created a cake that fed 50 people. The cake was such a success that Rachel’s business gained popularity in her area, allowing her to expand her work into custom buttercream cakes. Due to her rise in popularity, she was featured on Good Morning Texas, Project Me with Tiffany Podcast and in Voyage Dallas Magazine.
An expert in her field, Rachel completed coursework at Ball State University after graduating high school. Subsequently, she expanded her professional knowledge, earning a Texas Food Management certificate, a Texas Food Handler certification, and a bachelor’s degree in hospitality management from Kendall College. Outside of her work, Rachel contributes to her community through numerous local charities, fundraisers, and global networking groups.
In light of her considerable achievements, Rachel won the Corporate Stellar Service Award from The Medicus Firm in 2016 and two Corporate Commitment Awards in the following two years. While her career has been filled with highlights, she takes the most pride in founding She’s Gone Bananas despite having no experience as a baker. The cornerstone of her success lies in her customers, who are the driving force behind the business’s growth. In the coming years, Rachel intends to establish a storefront for her business, share her passion and create a welcoming environment in which people can enjoy her goods and socialize with others.
